Boonies Mussels Diablo

1 Lb Rope-Grown Mussels, cleaned, dried
4 Tbsp Butter
2 Tbsp Chopped Garlic
4 Oz. Sliced Jalapeno Peppers
8 Oz. Dry White Wine
Salt and Pepper to Taste

Heat skillet or saute pan and melt half the butter over medium heat.
Add garlic and allow to cook for 1 minute.
Add mussels and toss to coat shells with butter.
Allow mussels to begin to open then add Jalapenos and wine.
Simmer for 5 minutes or until all shells have opened. Season with salt and pepper.
Remove from heat and add remaining butter to slightly thicken the broth, gently stirring away from the flame.
Serve with crusty bread for dipping and fresh lemon.


 

Red Roost Crab Dip The Red Roost

1 Lb Cream Cheese Softened
1 Lb Lump Crab Meat
3 Tbsp Mayonnaise
2 Tbsp Lemon Juice
1 Tbsp Worcestershire Sauce
4 Oz Shredded Cheddar Cheese

Blend all but the Crab Meat and Cheddar together until smooth.
Gently fold in Crab Meat Place in shallow casserole or pie dish
Bake at 350 Degrees until golden. About 12-15 minutes.
Top with Cheddar and place back in oven until melted and bubbling at edges.
Serve with sliced bread, crackers, or tortilla chips for dipping.


 

Sobo’s French Style MusselsSobo's Wine Beerstro

1 Lb. Prince Edward Island Mussels
2 oz. diced shallots
1 oz. chopped garlic
.25 oz chopped parsley
.25 oz chopped tarragon
.25 oz chopped cilantro
.25 oz lemon zest
1 cup Organic Chardonnay Wine
Cup Heavy Cream
.25 lb Unsalted Butter
1 Tbsp. Extra Virgin Olive Oil
1 Loaf or Crusty French bread

Sautee Shallots and Garlic in EVOO and Butter until tender
Add Mussels and sauté until two or three begin to open
Deglaze with White Wine
Add Gremolata
Add Heavy Cream
Reduce to a sauce consistency on medium heat or until sauce coats back of a tablespoon
Serve in a large bowl with crust French loaf


 

Specific Gravity Pomodoro PizzaSpecific Gravity

1 12 oz. ball of Dough
6 oz of Specific Gravity Secret Recipe Pizza Sauce
4 oz of diced Fresh Milk Mozzarella
4 oz Pomodoro Mix (see recipe below)

Sprinkle Ball of Dough with flour
Delicately Stretch dough to 14" Pie
Ladle Sauce onto dough and distribute evenly allowing .75 of an inch crust
Distribute shredded mozzarella evenly over all areas covered by sauce
Distribute Pomodoro mix evenly over all areas covered by cheese
Distribute Fresh Milk mozzarella evenly over all area covered by Pomodoro mix
Bake at 425 degree oven on pizza stone that has been dusted with flour for roughly 20 Minutes
Remove and cut into 6 slices
Enjoy

 

Pomodoro Mix Recipe

1 Large Beefsteak Tomato (diced)
2 oz. diced red onion
1 oz. chopped garlic
1 oz. chiffionade of Basil
1 oz. Extra Virgin Olive Oil
1 oz. of Red Wine Vinegar Pinch Salt Pinch Pepper

Combine all ingredients in mixing bowl and toss
Let Marinate for 3 hours
